homemade graham crakers and marshmallows...
toasted in the oven.
a quite decadent dessert shall i say.
do give it a try as the weather cools down.
you will not be disappointed.
first cream 8 tablespoons butter, 2 tablespoons sugar,
2 tablespoons brown sugar and 2 tablespoons honey
in the mixer until soft and creamy.
sift together 1 c. flour, 1/4 c. whole wheat flour,
pinch salt, 1/4 t. baking soda and 1/4 t. cinnamon.
add to butter until just combined.
roll into desired thickness and cook at 350 until done.
i would double the batch, as it does not make very
much dough. and you are going to want to eat them...
often.
now for those marshmallows...
mix 3 envelopes of gelatin (22g) and 1/2 cup of cold water
in bowl of stand mixer and let sit 10 minutes.
while waiting combine 2 cups sugar, 2/3 cups corn syrup
and 1/4 cup water to boil.
Once it has reached a full boil,
let boil for one full minute.
let boil for one full minute.
Remove from heat and pour over gelatin mixture.
Whip on high speed for about 10 minutes
until it resembles white fluff....similar to a meringue.
Add 1/4 tsp. salt and 1 tablespoon vanilla;
whip to combine.
Spread into lightly greased sheet pan and sprinkle
with desired decorations...and or fruit.
We used strawberries.
Let cool in fridge.
Once ready, cut into desired shape with
cookie cutters or a knife.
